Curried Lentils and Avocado

Quick, easy and nutritious meal for lunch or as a side for dinner. It is a complete meal with protein, fats and carbs.

Lentils

  • High in protein and equal parts of carbs and fiber
  • Low in Calories
  • Great source of folate and magnesium
  • Reduces cholesterol
  • The high fiber content is good for overall gut health
  • Stabilizes blood sugar levels
  • Increases energy

Avocados

  • High in potassium                                                                                                                   
  • Monounsaturated fatty acids – good for heart health
  • High in fiber
  • Lowers cholesterol
  • The fat in avos will assist with the better absorption of vitamins A, D, E and K
  • Loaded with antioxidants

Tomatoes

  • High in lycopene which is a very strong antioxidant
  • Vitamins A, C, K and B6
  • Numerous minerals

Recipe

½ ripe avocado 1 small onion chopped 100g cooked red lentils
Masala or curry powder to taste Ground Cumin to taste 4 plum tomatoes
Chopped mint leaves Yoghurt
Fry the onion in a little olive oil.
Add the curry powder and cumin and fry a little longer
Add the lentils and tomatoes
Place in the half avocado and top with mint and yoghurt
