There you were wondering what next to do with your kefir to give it bit of an interesting spin. This is also for all of you out there who believe that Cultured Foods are dull and taste awful! Think again.
I came across this recipe and knew that I had to share it with you. Summer is here and what would be nicer than a soup that is not only yummy but is also teeming with probiotics, enzymes and friendly bacteria. Serve it with a thin crust sour dough pizza topped with fresh veggies and hard kefir cheese.
You will need
About 650 grams of peeled, seeded and chopped cucumber
I avocado, peeled, pip removed and roughly chopped
½ small red onion, chopped
1 cup milk kefir
Handful of fresh coriander, dill or parsley
Chopped radish and spring onion to garnish
Blitz everything together in a food processor and chill for a few hours.
Serve topped with the radish and spring onion.
Wow, that was easy. My kind of recipe. No trouble at all but bound to impress.
