Store bought muesli is invariably loaded with added sugars, fats and bulk that serve little purpose. It can however be a fantastic start to your day and you can be very imaginative with what you add to it.
Here is my recipe but be warned, the smell as it bakes in the oven is heavenly. I store mine in a tightly sealed glass jar in the fridge and every time I open it, oh my word, I start to drool.
You can adjust the recipe as you choose according to the quantity that you want to make. I like recipes that are not an exact science and a handful or pinch are accurate enough.
- Chop half a cup of almonds and macadamias. In fact you can use any nuts. I often use peanuts and walnuts.
- 2 cups of oats
- ½ cup each of sunflower seeds, pumpkin seeds, chia seeds. Again, you can actually add any combination of seeds. I often add sesame and linseed.
Mix all of the above together. Then….
- Melt 30ml of coconut oil
- 30 ml of honey
- 5ml cinnamon
- 5ml nutmeg
- 10ml vanilla essence (make your own)
Combine this with the dry mix and spread onto a baking tray.
Place in the oven at about 110 degrees and allow to slow bake. Stir occasionally and when your desired crunch is reached, it is ready.
Allow to cool and then add raisins, cranberries, dried figs in fact anything that your heart desires.
Store in the fridge.
Enjoy with Cultured Yoghurt or milk kefir and fresh fruit!
